A wonderfully easy recipe for blueberry cake with a sugary butter sauce to top it off! Make the cake in one bowl; it only takes a minute or two to whip up. Perfect for those days when you want some homemade baking without hours of work.
Blueberry Cake with Sugary Sauce
Cake
1/2 cup of butter
1 egg
3/4 sugar, beat together
2 cup of flour
2 tsp baking powder
pinch of salt
1/2 cup of water
1/2 cup of milk
1 cup blueberries
Sauce
1 cup sugar
4 tbsp flour
3 cups of boiling water
1 tsp vanilla extract
1 tsp butter
For the cake, mix the butter, egg, sugar together, then add the rest of the ingredients, bake at 350° for about one hour, or until the top is lightly golden and a cake tester or tooth pick comes out clean.
To make the sauce, cook the sugar, flour and water over medium heat until it thickens, stirring often. Remove from stove, then add vanilla and butter. Drizzle over the still warm cake and serve.
Makes 1 cake, serves 6-8
