Cold Weather Acorn Squash Soup

This soup is so simple; it’s down right amazing! It is very mild and works well when your bladder is flaring, or any time that you need a warm pick-me-up. Any number of ingredients from cheese to herbs to rice or cubs of cooked potatoes could be added to it if you like. I like to serve it with a snippet of fresh chives and often some homemade croutons.


Cold Weather Acorn Squash Soup


2 large acorn squash, cooked, peeled, deseeded and cubed

4 cups of bladder safe vegetable or chicken or turkey stock (homemade if possible)

1 ½ cup of half and half cream (light cream)

¼ tsp nutmeg (optional)


Prepare the squash and combine with the stock in a large, heavy bottomed saucepan. Over medium high heat, bring to a boil and then reduce the heat to medium low and continue to simmer the soup, stirring often, for about 30 minutes.

Remove from the heat and transfer to a blender or food processor (or leave it in the pot if you have a handheld blender). Add in the cream and nutmeg (if using), season with salt and pepper if you like and puree until all the ingredients are smooth.

Return to squash soup the saucepan, over medium low heat, and heat until warmed all the way through (you don’t want it to boil though).

Serve warm with any accompaniments that you like. Leftovers will keep for two days in the fridge, or can be frozen in a freezer safe container for at least three months and defrosted before using.
