A classic recipe, and a true comfort food. The intoxicating aroma of banana bread as it is baking will make your mouth water. Feel free to add any nuts that your bladder can handle, about a third of a cup works well here.
Served with a little butter or on its own it banana bread makes a lovely snack or breakfast. Do watch out however, as some ICers find the potassium in bananas bothers their bladders.

Heather's Banana Bread
½ cup butter
1 cup white sugar
2 eggs (organic or free range if possible)
3 large bananas, mashed
1 ¾ cup flour
1 tsp baking powder
1 tsp baking soda
pinch salt
Cream butter and sugar, add eggs, and beat well. Add bananas and sifted dry ingredients, mix well, but don’t over mix – you don’t want the end result to be chewy.
Bake at 350 degrees for about 45 minutes (depending on oven) in a greased and floured or non-stick loaf pan.
Yields one loaf of banana bread
