No-Bake Oatmeal Maple Cookies

Simple, scrumptious cookies with tons of bladder safe ingredients in them. If you are concerned about the marshmallow fluff you can always melt a couple of cups of whole marshmallows and add them into the mix at the same point. You can also get an all natural marshmallow cream with no refined sugars, preservatives, artificial colors or flavors called Ricemellow.

No-Bake Oatmeal Maple Cookies

2 cups of sugar

½ cup butter or vegetarian margarine

½ cup milk

1 cup of marshmallow fluff (see note above)

3 cups of oatmeal 1/3 cup chopped bladder safe nuts (optional)

2 tsp maple extract or 2 tbsp of real maple syrup

Line a baking sheet (you may need two sheets depending on their size) with wax paper or non-stick parchment paper, or use a Silpat lining.

In a large saucepan combine the milk, sugar, and butter (or veg margarine) and bring to a gentle boil over high heat. Simmer for about 2 minutes.

Take the pot off of the heat and add in the remaining ingredients. Stir vigorously to combine everything really well, and continue stirring until the mixture begins to feel stiff.

Drop a tbsp of the mixture at a time onto your prepared baking sheets and allow to harden for an hour in the open air. Eat or transfer to a tin or plastic container and store (covered) for up to 5 days.

Makes approximately 30-35 cookies
