Butterscotch Cornflake No-Bake Drops

Another no bake cookie to help keep you from having to be on your feet for ages, and give you time to sit down and let your bladder and body relax through out the holiday season. I always use organic cornflakes for this recipe, as I can get an organic brand for the same price of the leading name brand cornflakes. Most large grocery stores are now stocking cashew butter, but if you can't find it there check you local health food store or organic market.

This recipe can be multiplied as many times over as you need, and is very popular with kids. I adapted it from a recipe that called for peanut butter, and if your bladder can tolerate it you could use that instead, but it is just as good with cashew butter.


Butterscotch Cornflake No-Bake Drops


5 cups of cornflakes

2 cups of butterscotch chips

5 tbsp cashew butter


Line a baking sheet (you may need two sheets depending on their size) with wax paper or non-stick parchment paper, or use a Silpat lining.

In a double boiler, or a heat proof glass bowl of over a pot of gently boiling water (don't let the water touch the bottom of the bowl) melt the butterscotch chips and cashew butter together, string continually until the chips are just melted.

Take the bowl or top pot of the double boiler off the heat and stir in the cornflakes.

Drop by tablespoon sized amounts onto you lined baking sheets and place the sheet(s) into the fridge for at least 2 hours or until the cookies have hardened.
Remove the cookies from the baking sheets and transfer to a tin or plastic storage container, where they will stay fresh for about a week if well covered.


Makes about 50-60 small cookies
