Creamy Chive and Red Onion Potato Salad

This simple potato salad is free of many of the common ingredients in potato salads that can cause bladder flares 9such as mayonnaise, mustard and relish).

If your bladder cannot tolerate any raw red onion, you can omit it and increase the chives and cucumber slices.
To turn this dish into a meal in itself you could add some fresh beans or peas, chicken, fish or other seafood and double the cream cheese to make enough dressing.

Creamy Chive and Red Onion Potato Salad


1 ¼ lb red potatoes washed and scrubbed but peels left on

2-4 tbsp fresh chopped chives (or as you like)

¼ cup cream cheese, at room temperature (or at least close to it)

1 small cucumber (peeled if necessary), very thinly sliced

¼ (or more if your bladder can tolerate it) red onion peeled and very thinly sliced

½ tsp dried basil

salt and pepper to taste (both optional)


Put the red potatoes in a large saucepan. Cover with salted water (salt is optional) and allow the potatoes to come to a boil.

Reduce the heat to low (or medium-low depending on your oven). Partially cover the pot (leave a gap between part of the rim of the pot and the lid) and let simmer, undisturbed for at least twenty five minutes. At which point check for doneness and continue cooking in five minute intervals until the potatoes are cooked through.
In a mixing bowl combine the chives, cream cheese, dried basil and salt & pepper.

Drain the potatoes and rinse them under cold water for a few moments to cool them down.

Next cut them into bite sized cubes (say ¼ of an inch), and add the cream cheese mixture. Add the onion slices and cucumber slices and gently fold them throw the salad. Serve at once, or allow to chill (covered) in the fridge for a few hours.

Leftovers will keep for about 2 days, well covered, in the refrigerator.
