This is one of those wonderfully simple recipes that proves you don't need an encyclopedia of ingredients to be delicious. It is utterly simple to prepare and takes about 12 minutes including prep time to cook. Excellent as a light lunch, or alongside anything you like – it really goes well with chow mein and chicken dishes.
Garlicky Green Beans with Cashews
1 lb (450 grams) of fresh green beans, washed and tailed
2 tsp sesame oil
2 cloves of garlic, peeled and finely chopped
1/3 cup of cashews
Heat the sesame oil in a heavy bottomed frying pan or in wok over medium-high heat. Add in the garlic and cashew nuts and heat just until the garlic starts to turn golden (don't let it brown, it will become bitter).
Next stir in the green beans and stir-fry for 2-3 minutes or until the beans are just tender. Serve warm.
Serves 3-4 as a side dish or 2 as a light lunch or starter
