No matter what I make with it, cottage cheese always make me think of the 1980’s. But that certainly doesn’t mean that it isn’t still a versatile, bladder safe dairy product today!
If you bladder can tolerate canned pears (some brands are creatd without the addition of citric acid) you could use those here instead of fresh here too, if you’d like. This is a good dessert (or even breakfast) for times when your bladder is flaring or you don’t want an overly fancy, sugary after dinner treat.
Minted Pears and Cottage Cheese
125 grams (1/4 lb) cottage cheese, drained of excess liquid
450 grams or thereabouts (1 lb) of ripe fresh pears, peeled and sliced into quarters
8 lettuce leaves (I did say 80’s after all, so you need all the touches)
1 ½ tbsp of fresh mint leaves, finely chopped
In a mixing bowl combine the cottage cheese and mint, if you like you could add slat and pepper to taste, but they aren’t necessary.
Line four dessert plates or shallow bowls with two lettuce leaves each and divide the pears evenly amongst the four plates. Top each plate of pears with one quarter of the cottage cheese and mint mixture and serve at once. Garnish with mint leaves if you like.
